A Tandoor Commis 1, also known as a Commis Chef, is responsible for a variety of tasks in a kitchen, including:
• Food preparation : Measuring, mixing, and preparing ingredients, sauces, and seasonings. This includes washing, peeling, and chopping fruits and vegetables, and seasoning meats.
• Inventory : Taking inventory of supplies and requesting resupply when needed.
• Food storage : Ensuring that food is stored properly to prevent spoilage.
• Cleaning : Keeping work areas clean and sanitized.
• Food presentation : Plating and presenting food as directed by the Chef de Partie.
• Safety : Following food health and safety regulations, and reporting accidents and injuries to management.
• Communication : Communicating with the chef and supervisor.
• Supporting the chef : Supporting the Chef de Partie or Demi Chef de Partie.
A Tandoor Commis 1 should also be able to:
• Follow menu specifications
• Keep up with new products, recipes, and techniques
• Coordinate with other sections
• Control food stock and costs
• Ensure quality standards
