Key Responsibilities



1.

Menu Execution & Kitchen Operations



Assist in menu execution by ensuring presentation, production efficiency, and cost-effectiveness. Help estimate daily production needs to ensure smooth operations. Maintain consistency in plating, portioning, and presentation to uphold Viksit's dining experience. Supervise and guide the team to follow recipes and SOPs with precision. Step in and handle any kitchen role if required during peak service or staff shortages. Support the team in executing outdoor catering, special events, and collaborations. Take on daily operational decision-making in the absence of senior leadership. Contribute to developing and improving operational systems and SOPs.

Quality Control and Maintenance



Oversee food preparation to ensure accuracy, consistency, and adherence to quality benchmarks. Maintain quality logs and proactively address any deviations from set standards. Ensure the accuracy and consistency of dishes being served during service. Identify and report equipment maintenance and infrastructure issues, ensuring timely resolution.

Cost Control & Inventory Management



Oversee kitchen inventory management by planning and coordinating with the purchase and stores teams. Ensure proper receiving and storage of stock to maintain quality and efficiency. Supervise and manage the accuracy of production logs and wastage reports. Implement cost control and waste reduction strategies in line with Viksit's policies. Conduct regular audits and respond to internal reports effectively.
4.

Team Leadership & Training



Lead, guide, and mentor junior chefs, CDPs, and Commis to foster a collaborative and high-performance environment. Conduct training sessions to enhance team skills, efficiency, and food safety knowledge. Set clear performance expectations and provide constructive feedback to improve output. Maintain open, collaborative relationships with the team.
5.

Health, Safety & Hygiene Compliance



Ensure cleanliness, hygiene, and food safety standards are met. Maintain compliance with health and safety regulations.
6.

Learning & Development



Identify learning opportunities for self and team members to enhance skills. Support and mentor team members in their professional growth.

What We Look For



1.

Culinary Expertise

- Strong understanding of cooking techniques, ingredient selection, flavor balancing, and plating. Experience handling kitchen tools and equipment.

Experience & Qualification

- Prior

2-3 years

of experience as a Sous Chef or Senior CDP in a fast-paced, high-quality kitchen.

Leadership & Team Management

- Ability to lead, train, and mentor a team.

4.

Attention to Detail

- Precision in food preparation, plating, and adherence to quality standards.

5.

Communication

- Ability to communicate effectively with the team and Head Chef.

6.

Adaptability & Flexibility

- Ability to work in a dynamic, fast-paced kitchen setting.
