Job Description

We are looking for a Sous Chef for Narra, our restaurant on Havelock island in the Andamans.

Narra restaurant is one of the few restaurants on havelock that is providing a high class experience to the guests. There is no restaurant like it and we would like to maintain those high standards. The venue hosts an open kitchen and bar, so great interpersonal and social skills are essential for this role.

Previous sous chef experience is preferred, but we might also consider a very strong CDP.

The ideal candidate will be a culinary/hospitality university graduate with 4- 5 years of experience. Along with western kitchen experience, those with Latin or Asian experience will be considered as a plus. This sous chef position will have the opportunity to become the head chef of Narra, showcasing their talents with managing a team and ensuring the team makes food to the high standards of the head chef.

In this position you will have the mentorship of renowned chef Jay Adams, who will help you and the team with the creative aspect of menu planning and plating with the use of local ingredients.

You will need to have extreme passion for pleasing guests, making delicious food and working in challenging conditions. The Andaman Islands is a very rewarding place to live but it is also demanding, so you have to be up for the task and maintain the ability to always be inventive and innovative.

Primary responsibilities

Manage kitchen operations in line with all policies and standards.

Ensure the team is working to its full capacity

Maintain purchasing, receiving and food storage standards.

Ensure compliance with food handling and sanitation standards.

Supply chain management.

Recognize superior quality products, presentations and flavour.

Check the quality of raw and cooked food products to ensure that standards are met.

Follow proper handling and right temperature of all food products.

Constant supervision and mentorship to the team and coordinate activities of cooks and workers engaged in food preparation.

Achieve and exceeds goals including performance goals, budget goals, team goals, etc.

Identify the developmental needs of others and coaching, mentoring, or otherwise helping others to improve their knowledge or skills

Communication is extremely important in this role whether it is to your kitchen team, chef mentor or service team.
