Job Summary:
The Senior Captain is a key member of the restaurant's leadership team, responsible for overseeing the dining room's smooth operation and ensuring an exceptional guest experience. This role involves supervising waitstaff, managing guest reservations, handling special requests, and maintaining high service standards. The Senior Captain plays a crucial role in training staff, resolving customer complaints, and ensuring adherence to health and safety regulations.
Key Responsibilities:
1. Leadership and Supervision:
• Lead and supervise waitstaff to ensure efficient and effective service.
• Conduct pre-shift meetings to communicate daily specials, out-of-stock items, and any service-related updates.
• Mentor and train new and existing staff on service standards, menu knowledge, and customer service skills.
2. Guest Relations:
• Greet and welcome guests, ensuring they feel valued and appreciated.
• Handle guest inquiries, complaints, and special requests promptly and professionally.
• Ensure that all guests have a memorable dining experience by providing attentive and personalized service.
3. Operations Management:
• Coordinate the flow of the dining room to optimize seating and service efficiency.
• Oversee reservations and manage the seating plan to maximize table turnover.
• Monitor and maintain cleanliness and organization of the dining area.
4. Service Excellence:
• Ensure that all food and beverages are served to the highest standards.
• Assist with food and beverage service during peak times to ensure smooth operations.
• Maintain an in-depth knowledge of the menu, including ingredients, preparation methods, and allergens.
5. Quality Control:
• Inspect table settings, including table linen, cutlery, and glassware, for cleanliness and proper placement.
• Ensure that all staff adhere to the restaurant's dress code and grooming standards.
• Monitor the quality of food and beverages served to ensure consistency and excellence.
6. Training and Development:
• Develop and implement training programs for staff to enhance service skills and product knowledge.
• Provide ongoing feedback and coaching to improve staff performance.
• Identify and address training needs to ensure continuous improvement.
7. Health and Safety:
• Ensure compliance with health and safety regulations and hygiene standards.
• Conduct regular inspections to maintain sanitation and safety standards.
• Handle emergency situations according to restaurant policies and procedures.
Qualifications:
• Proven experience as a Captain or similar supervisory role in a high-end restaurant.
• Excellent leadership and team management skills.
• Strong customer service orientation and communication skills.
• In-depth knowledge of food and beverage operations.
• Ability to work under pressure in a fast-paced environment.
• High school diploma or equivalent; hospitality or culinary training is a plus.
• Flexibility to work various shifts, including weekends and holidays.
Physical Requirements:
• Ability to stand and walk for extended periods.
• Capability to lift and carry up to 25 pounds.
• Dexterity to handle small and intricate items like cutlery and glassware.
