Duties and Responsibilities - \xc3\x98 Deputize in the absence of the Restaurant Manager and ensure the smooth functioning of the restaurant. \xc3\x98 Schedule weekly/fortnightly staff duty shifts with the approval of the Restaurant Manager ensuring that work exigencies are met and the staff is rotated fairly. \xc3\x98 Allot daily duties to subordinate staff to meet work exigencies ensuring equity of work. \xc3\x98 Conduct daily briefing using it as a vehicle for two-way communication, training and corrective action. \xc3\x98 Attend to guest complaints and ensure guest satisfaction through immediate action. \xc3\x98 Inspect the mise-en-scene and mise-en-place to ensure the smooth flow of operations. \xc3\x98 Ensure the maintenance and aesthetic upkeep of the restaurant in close coordination with engineering and housekeeping. \xc3\x98 Organize the training of staff for meeting the standards of service. \xc3\x98 Develop restaurant sales through upselling, guest contacts and ensuring good service. \xc3\x98 Ensure that the restaurant is free from work hazards.
Supervise food service with a view to ensuring speed, quality of service and personalization \xc3\x98 Appraise staff performance and recommend rewards to the restaurant \xc3\x98 Control costs by applying food control principles. \xc3\x98 Serve wines and beverages according to international practice. \xc3\x98 Motivate staff through fair leadership. \xc3\x98 Prepare flambe items, if applicable to the restaurant, with showmanship and authenticity. \xc3\x98 Maintain and control the par stocks of cutlery, crockery, linen, supplies, and equipment. \xc3\x98 Assist the accounts department in stocktaking. \xc3\x98 Hand over lost and found properties to the Housekeeping as per rules. \xc3\x98 Supervises: Restaurant Captains, Hostess, Servers and Apprentices.
