Profile Introduction:
The Pastry Chef de Partie (CDP) is responsible for assisting in the preparation, production, and presentation of high-quality pastry and dessert items in a hotel kitchen. The role requires strong culinary skills, creativity, and attention to detail to ensure the highest standard of pastries and desserts are delivered to guests. The Pastry CDP will work closely with the Head Pastry Chef and other team members to ensure smooth kitchen operations, food safety standards, and an exceptional dining experience.
Key Responsibilities:
• Prepare and present a wide range of pastries, cakes, cookies, breads, and other dessert items in line with the hotel's standards and menu offerings.
• Ensure all pastries are produced with precision and creativity, paying attention to flavor, texture, and presentation.
• Supervise and guide junior pastry staff and trainees, providing support and training as necessary.
• Collaborate with the rest of the kitchen team, including the Head Pastry Chef and other chefs, to ensure a smooth operation.
• Ensure that all pastries and desserts meet the hotel's quality standards for taste, appearance, and hygiene.
• Ensure that all food preparation adheres to food safety and sanitation standards, including cleanliness, storage, and handling of ingredients.
• Assist in the ordering and stock management of pastry ingredients, ensuring proper stock rotation and minimizing waste.
• Assist in the preparation of pastries for special events, weddings, and large group bookings as needed.
• Stay updated with the latest pastry trends, techniques, and innovations.
Profile Requirements:
• Culinary degree or diploma from a recognized culinary school (preferred).
• Specialized training in pastry and baking (highly desirable).
• Minimum of 3 years of experience in a pastry kitchen, with at least [1 year] in a Chef de Partie or similar role.
• Previous experience in a hotel or high-volume kitchen environment is an advantage.
• Strong knowledge of pastry techniques and dessert preparation.
