Job Description

As the Kitchen Manager at Delicia, you will be responsible for overseeing all aspects of kitchen operations, including food preparation, staff management, inventory control, and ensuring adherence to food safety standards. Your role will involve not only managing day-to-day kitchen activities but also implementing strategies to optimize food quality, minimize waste, and maximize profitability through effective food costing techniques.

Key Responsibilities:

• Kitchen Operations Management:
• Supervise and coordinate all activities in the kitchen, including food preparation, cooking, and plating.
• Ensure that food is prepared and presented according to company standards and recipes.
• Monitor kitchen staff to ensure they adhere to food safety and sanitation guidelines at all times.
• Staff Training and Development:
• Train and mentor kitchen staff on proper cooking techniques, portion control, and food presentation.
• Conduct regular performance evaluations and provide feedback to kitchen staff to promote continuous improvement.
• Delegate tasks effectively to ensure smooth kitchen operations during busy periods.
• Menu Costing:
• Collaborate with the head chef or executive chef to develop menus that are both appealing to customers and cost-effective for the business.
• Calculate food costs for menu items and establish selling prices that maintain profitability while remaining competitive in the market.
• Monitor food costs on an ongoing basis and adjust menu items and portion sizes as needed to optimize profitability.
• Inventory Control:
• Manage inventory levels for food and kitchen supplies, ensuring adequate stock levels while minimizing waste.
• Conduct regular inventory audits to track usage and identify any discrepancies or areas for improvement.
• Work closely with the purchasing department to source high-quality ingredients at competitive prices.
• Quality Assurance:
• Maintain high standards of food quality, taste, and presentation in all dishes served.
• Conduct regular inspections of food preparation areas and equipment to ensure cleanliness and compliance with health and safety regulations.
• Address any issues or concerns related to food quality or safety in a timely and effective manner.
• Budget Management:
• Assist in the development of the kitchen budget and manage expenses to stay within budgetary constraints.
• Identify opportunities to reduce costs without compromising food quality or service standards.
• Analyze financial reports and performance metrics to track kitchen performance and identify areas for improvement.
• Communication and Collaboration:
• Communicate effectively with front-of-house staff to ensure smooth coordination between the kitchen and dining areas.
• Collaborate with other members of management to develop and implement strategies for improving overall restaurant performance.
• Act as a liaison between kitchen staff and management, addressing any concerns or issues raised by either party.

Qualifications:

• Proven experience as a kitchen manager or head chef in a high-volume restaurant or catering environment.
• In-depth knowledge of food preparation techniques, menu planning, and kitchen management best practices.
• Strong understanding of food costing principles and experience with menu development and pricing.
• Excellent leadership and communication skills, with the ability to motivate and inspire kitchen staff.
• Attention to detail and a commitment to maintaining high standards of food quality and safety.
• Proficiency in inventory management software and Microsoft Excel is preferred.
