Job Summary:
We are seeking a talented and passionate Chef de Partie (CDP) with expertise in Indian cuisine to join our dynamic culinary team. The ideal candidate will have a strong background in preparing and presenting authentic Indian dishes, ensuring high standards of food quality, taste, and presentation. The CDP will be responsible for overseeing a section of the kitchen, managing a team of junior cooks, and ensuring efficient kitchen operations.
Key Responsibilities:
• Food Preparation and Cooking:
• Prepare and cook authentic Indian dishes, including curries, tandoori items, biryanis, and regional specialties.
• Ensure all dishes are prepared to the highest standards of taste and presentation.
• Kitchen Management:
• Oversee a section of the kitchen, managing the preparation and cooking activities of junior cooks and kitchen assistants.
• Ensure all kitchen operations comply with hygiene and safety standards.
• Menu Development:
• Assist in developing and updating the Indian cuisine menu, incorporating traditional and contemporary recipes.
• Suggest new dishes and culinary innovations that reflect current food trends and customer preferences.
• Quality Control:
• Maintain high standards of food quality, taste, and presentation at all times.
• Monitor and control food costs, minimizing waste and ensuring efficient use of ingredients.
• Training and Development:
• Train and mentor junior kitchen staff, ensuring they are proficient in preparing Indian dishes and following kitchen protocols.
• Conduct regular training sessions on food safety, hygiene, and cooking techniques.
• Inventory Management:
• Manage inventory for the Indian cuisine section, ensuring sufficient stock levels of ingredients and kitchen supplies.
• Coordinate with suppliers to source high-quality ingredients at competitive prices.
• Collaboration:
• Work closely with the Sous Chef and Executive Chef to ensure a cohesive and efficient kitchen operation.
• Collaborate with other kitchen sections to ensure timely and accurate food service.
Qualifications:
• Proven experience as a Chef de Partie or similar role in a high-volume, upscale restaurant or hotel specializing in Indian cuisine.
• In-depth knowledge of traditional and contemporary Indian cooking techniques and ingredients.
• Culinary school diploma or equivalent qualification is preferred.
• Strong organizational and multitasking skills, with the ability to manage a team and work under pressure.
• Excellent communication and leadership skills.
• Knowledge of food safety and hygiene standards.
• Ability to work flexible hours, including evenings, weekends, and holidays.
Physical Requirements:
• Ability to stand for extended periods.
• Ability to lift and carry heavy items.
• Comfortable working in a fast-paced, high-pressure kitchen environment.
