Job Summary:
The Food & Beverage (F&B) Controller is responsible for overseeing the financial aspects of the Food and Beverage operations, including managing costs, controlling inventory, assisting in budgeting and forecasting, and creating cost-effective recipes. This role also involves maintaining the Point of Sale (POS) system, including the creation and deactivation of item codes based on the menu changes. The position ensures the financial health of the F&B department while maintaining accurate records, optimizing food offerings, and ensuring recipe consistency.
Key Responsibilities:
• Cost Control & Analysis:
• Monitor and analyze food and beverage costs, ensuring they align with budgeted targets.
• Perform daily, weekly, and monthly cost-of-sales calculations for food and beverages.
• Investigate discrepancies or deviations from expected cost percentages and implement corrective actions.
• Provide recommendations to improve efficiency, reduce wastage, and enhance profitability.
• Recipe Creation & Menu Development:
• Work closely with chefs and kitchen staff to develop new recipes, ensuring they are both cost-effective and high-quality.
• Cost out new recipes and menu items to ensure they meet desired profit margins.
• Collaborate with the culinary team to update the menu regularly based on seasonal availability, customer preferences, and cost considerations.
• Maintain accurate recipe documentation and standardized portion controls to ensure consistency in food quality and presentation.
• Ensure that new recipes and menu items comply with food safety regulations and company standards.
• POS System Management:
• Oversee and maintain the Point of Sale (POS) system to ensure it is updated with accurate item codes, prices, and descriptions.
• Create new item codes in the POS system for new menu items or specials as they are introduced.
• Deactivate or remove obsolete or discontinued items from the POS system as per menu changes.
• Coordinate with the IT and F&B teams to ensure the POS system is functioning correctly and troubleshooting any issues that arise.
• Ensure the POS system reflects accurate inventory and pricing to streamline operations and billing.
• Inventory Management:
• Oversee inventory control to ensure proper stock levels, minimizing both overstocking and stockouts.
• Conduct regular physical inventories and reconcile against system reports.
• Work closely with procurement to maintain appropriate par levels and control stock turnover rates.
• Revenue & Financial Reporting:
• Assist in the preparation of daily, weekly, and monthly financial reports for the F&B department, including P&L statements.
• Prepare reports on sales trends, costs, and margins for review by senior management.
• Analyze financial performance and provide insights into key performance indicators (KPIs).
• Budgeting & Forecasting:
• Assist in the preparation of annual F&B budgets, providing input on revenue, costs, and profit forecasts.
• Monitor actual performance against budget and adjust forecasts as needed.
• Collaborate with department heads to create accurate forecasts based on historical data, upcoming events, and market trends.
• Compliance & Internal Controls:
• Ensure adherence to company policies, procedures, and internal controls for F&B operations.
• Ensure that all financial transactions are recorded accurately and comply with applicable laws and regulations.
• Conduct audits to ensure that all F&B revenue is properly accounted for, including room service, bar sales, and restaurant transactions.
• Collaboration & Support:
• Work closely with the F&B department, including chefs, managers, and servers, to understand operational needs and assist in cost management.
• Provide training and support to the team on financial policies, recipe costing, and best practices.
• Act as a liaison between F&B operations and the finance team to ensure effective communication of financial data.
• Cost Reduction & Process Improvement:
• Identify opportunities for process improvements that can reduce costs and increase efficiency within the F&B department.
• Recommend and implement strategies to reduce wastage, improve margins, and increase profitability.
Qualifications & Skills:
• Education:
• Bachelor's degree in Finance, Accounting, Hospitality Management, Culinary Arts, or a related field.
• Experience:
• Proven experience (1+ years) as an F&B Controller, Cost Controller, or in a similar role within the hospitality or food and beverage industry.
• Strong understanding of recipe costing, F&B operations, and financial reporting.
• Experience with maintaining and troubleshooting POS systems is highly desirable.
• Skills:
• Strong culinary knowledge for recipe creation and costing.
• Experience with POS software and ability to manage item codes, pricing, and inventory updates.
• Excellent analytical and problem-solving skills.
• Ability to work under pressure and meet deadlines.

• Proficient in Microsoft Office Suite, particularly Excel, and financial management software.
