Y Interacts with :
? F&B department for menu costing and pricing, wastages, breakage, etc.
? Kitchen for reporting of discrepancies and controls related decisions.
? Receiving and stores for item issue slips and control procedures
? Local licensing agencies for issue of Licenses required for the functioning of the restaurants.
? Central Excise / State Excise / Custom house for alcohol consumption reports.
? Other operational and non-operational departments for maximum guest satisfaction.
DUTIES & RESPONSIBILITIES
1. Prepares and participates in the Monthly Review.
2. Provides the Materials department with detailed Product and Purchase Specifications and yield specifications for all items.
3. Participates in the exercise on defining BSC initiatives and the monthly review process for his/her department.
4. Contributes in Developing and implementing Food and Beverage service standards regarding the quality of product & Service.
5. Reviews findings from various audits like Internal Audit and initiates corrective/preventive actions based on the same.
6. Ensures that the department is managed efficiently according to the established concept statement, providing a courteous, professional, efficient and flexible service at all times, following the hotels standards of performance
7. Participates in training and development of Management Trainees - takes personal sessions with them and reviews progress during the 'On The Job' phase.
8. Coordinates Single Entry System with (Room Service, Laundry, Maintenance, Florist, Pest Control and Front Office) for In-room Private bar audit checks.
9. Conducts spot and periodic inventory checks in Food and Beverage stores / bars to control pilferage and also checks the expiry dates for all Food and Beverage items
10. Prepares P& L statement for special functions and events organized by the hotel.
11. Conducts annual performance appraisal review at the end of the year for all executives of the department using the BSC-KRA system. Determines and follows up on their development needs.
QUALIFICATIONS
• B.COM , Post graduation preferred
• Diploma in food maintenance and quality control preferred
WORK EXPERIENCE
• Should have overall experience of 9-14 of which specifically 2-3 years experience as Assistant F&B Controller in a 5 star luxury hotel (large operations) or 2-3 year experience as an F&B Controller of medium sized hotel of international five star qualities.
• Proven track record in departmental and organizational profitability, employee engagement, team handling, cost and inventory control techniques etc.
KNOWLEDGE
• Proficient in Cost Control and inventory management techniques, Resource allocation and management
• Hotel operations (especially F&B Production and Service)
• National and international Standards regarding quality of service and products
• Knowledge of statutory compliances, local laws , licensing and certifications related to hygiene , maintenance and quality of food and beverage products
SKILLS
