You will be responsible for assisting the Executive Chef in the management of the kitchen team to maximize Food & Beverage profitability whilst overseeing food preparation, production and implementation of menus which are designed to deliver innovation and project the hotel as a market leader in the local food industry. Our property has the size and volume for you to create a difference and make an impact. The Hotel has 127 guest rooms, three conference rooms, and two F&B outlets. What You Will Be Doing Directly manage conferencing-events, focusing on daily operations and related projects in addition to overseeing all outlets and in room dining. Maintain and monitor hygiene, health and safety standards; and ensure that Hazard Analysis and Critical Control Point regulations are adhered to. Establish and maintain control procedures including food cost, labour and operating expenses. Demonstrate a variety of culinary techniques and use them in the development of the culinary team. Cultivating a positive work environment where learning and personal development are benchmarks by which quality improvement is driven. Qualifications Relevant culinary trade qualifications. Minimum of 3 years experience within a hotel or similar environment. Demonstrated interpersonal skills to build relationships both within the Kitchen Team and with External Suppliers. A strong understanding of food cost & control and food safety requirements. Experience with inventory management systems, training, financial management and customer service.
