As a Pastry Executive Chef at Hunger Inc. you will be an ambassador for the exceptional service and cuisine that are the characteristics of our dining experience.

This role will report to the Executive Chef and will attend to The Bombay Canteen/O Pedro.

Our flagship restaurant, The Bombay Canteen showcases the wealth of India\xe2\x80\x99s cuisine by recreating local, seasonal dishes and reinterpreting age old Indian culinary traditions in a frequently changing menu. Our next venture, O Pedro, pays homage to the energy of Goa in a menu that brings back the fun of tropical living with simple, sophisticated food and drink, with influences from the state\xe2\x80\x99s Portuguese history. Our latest venture, Bombay Sweet Shop is a modern day mithai shop which brings back the magic of mithai in a never seen before avatar, in a fun and contemporary way, while staying deeply rooted in traditions and techniques.

Responsibilities:

  • As an Executive Pastry Chef, you must be well versed in food hygiene and safety guidelines, fire and health safety policies.
  • Take responsibility for training, scheduling, evaluating, counseling, motivating and coaching new employees.
  • Developing new recipes for seasonal menus.
  • Leading and managing the quality/quantity of items produced by the Pastry department, coordinating the production as it relates to banquet and restaurant functions
  • Control food stock and food cost in the kitchen.
  • Liaising with the executive and sous chefs to ensure a successful working environment. Be instrumental in organizing an efficient flow of production.
  • Supervise preparation, quality and quantity of all baked items. Check all daily events, delegate and follow up.
  • Oversee the monitoring of weekly sales and adjusts prep production levels ensuring all food products are ordered to par levels and can make adjustments according to business volumes
  • Ensure the highest standards and consistent quality in the daily preparation and stay up to date with the new products, recipes and preparation techniques.
  • Ensure the proper sanitation and cleanliness of surfaces and storage containers, refrigerators and freezers.
  • Ordering new supplies, ingredients, and equipment for the pastry section, when needed, and within budget.
  • Coordinate with the F&B staff with upsell items, out of stock items and limited portions, specials for the day etc.
  • Incorporating feedback from restaurant staff and patrons to make improvements or resolve issues.
  • Execute an impeccable deep cleaning and fumigation schedule according to proper SOPs.
Requirements
  • 5+ years previous pastry kitchen experience at a high volume restaurant/hotel is an asset
  • 2 or more years\xe2\x80\x99 experience working within the food industry as a Pastry Chef, Baker, or relevant role.
  • Qualification from a culinary school required. Certificate in culinary arts, pastry-making, baking, or relevant field. Basic computer skills and familiarity with inventory systems
  • Creative ability with artistic skill in decorating cakes and other desserts.
  • Strong interpersonal and problem solving abilities
  • Highly responsible & reliable with keen attention to detail
  • Ability to work well under pressure in a fast paced environment
