The Butchery Commis is responsible for preparing meats, fish, and poultry according to specified guidelines, ensuring freshness, quality, and presentation.
• Meat Preparation:
• Assist in preparing, trimming, cutting, and portioning meats, fish, and poultry to specified standards.
• Maintain quality control by checking the freshness and appearance of products.
• Inventory and Stock Management:
• Monitor stock levels of butchery items and report any shortages or issues to the Butchery Chef.
• Rotate stock according to the First In, First Out (FIFO) principle to maintain product freshness.
• Assist in receiving, inspecting, and storing meat and other products following hygiene and safety protocols.
• Hygiene and Safety Compliance:
• Ensure that the butchery area, tools, and equipment are cleaned and sanitized regularly.
• Follow strict health and safety standards to prevent cross-contamination and foodborne illnesses.
• Adhere to all kitchen policies, especially regarding safe handling and storage of meats.
• Knife Skills and Equipment Handling:
• Utilize knives, slicers, grinders, and other equipment skillfully and safely to process meats.
• Sharpen knives and maintain butchery tools to ensure precision and efficiency.
• Supporting the Butchery Team:
• Assist the Butchery Chef and senior team members with daily tasks and special requests.
• Communicate effectively with other kitchen staff to ensure timely service and high standards of preparation.
• Portion Control and Waste Management:
• Follow portioning guidelines to maintain cost control and minimize waste.
• Properly dispose of trimmings and by-products to contribute to waste reduction initiatives.
Skills and Qualifications:
• Education: diploma in culinary arts or butchery training is preferred.
• Experience: Prior experience in a professional kitchen or butchery setting is an advantage.
• Skills:
• Strong knife skills and understanding of meat cuts.
• Knowledge of food safety, sanitation, and hygiene protocols.
• Ability to work in a fast-paced environment, often under pressure.
• Physical Requirements:
• Ability to stand for extended periods.
• Capability to lift and carry heavy meat products and equipment as needed.
