: Commis Chef - Continental & Indian Tandoor ( 2 POSITIONS )
Position: Commis Chef
Specialization: Continental Cuisine and Indian Tandoor
Reports To: Chef de Partie / Sous Chef
Experience: Minimum 1-2 years of experience in a kitchen, with exposure to Continental and/or Indian Tandoor cuisine preferred
Key Responsibilities
• Food Preparation:
• Assist in preparing high-quality dishes for both Continental and Indian Tandoor sections.
• Prepare marinades, sauces, and accompaniments for Indian Tandoor dishes, such as kebabs, naan, and other specialties.
• Support Continental preparations, including soups, appetizers, mains, and desserts.
• Cooking and Plating:
• Handle tandoor equipment and techniques, such as skewering, grilling, and maintaining the right cooking temperature.
• Ensure proper plating of dishes with attention to presentation and portion control.
• Mise en Place:
• Ensure all ingredients are prepped, chopped, and ready for service.
• Maintain an organized workstation for smooth kitchen operations.
• Hygiene and Safety:
• Follow food safety and hygiene standards as per company and legal requirements.
• Clean and sanitize kitchen equipment and tools after use.
• Inventory and Stock Management:
• Monitor ingredient levels and report shortages or quality concerns to the senior chef.
• Assist in proper storage of perishables and non-perishables.
• Collaboration and Training:
• Work closely with other kitchen team members to ensure timely delivery of food orders.
• Learn and adapt to new techniques, recipes, and kitchen processes under the guidance of senior chefs.
• Quality Assurance:
• Ensure dishes are prepared according to established recipes and quality standards.
• Monitor and maintain consistent taste, texture, and presentation for both cuisines.
Requirements
• Experience: Minimum 1-2 years of experience in a kitchen, with exposure to Continental and/or Indian Tandoor cuisine preferred.
• Skills:
• Basic knowledge of Indian spices, Tandoor equipment, and Continental cooking techniques.
• Ability to work in a high-pressure kitchen environment.
• Knife skills and familiarity with basic kitchen equipment.
• Education: Culinary diploma or certification is an advantage.
• Other Qualities:
• Passion for cooking and learning new culinary techniques.
• Team player with strong communication skills.
• Ability to follow instructions and adhere to recipes.
