We're looking for a qualified Commi chef who specialises in Continental cuisine like thin crust pizzas, fries, nachos, sandwiches, garlic breads, grilled meats, pastas, salads etc.
Key Roles & Responsibilities
Setting up kitchen for preps/service/ day-to-day operations and delegate tasks as well as supervise Commis and stewarding staff as per daily requirement
Takes care of daily food production and duties assigned by the superiors to meet the standard and quality set by the restaurant
Execute various types of menu items/preps- pizza dough & breads, appetizers, burger patty, fries prep, meats marination & prep, sauces & dressings
Attention to detail towards final presentation of all dishes before any dish goes out for pass
Prep all sauces, vegetables, meats, doughs, etc as required for daily operations
Estimate daily production needs and check the quality of raw and cooked food products to ensure that foodsafety & taste standards are met
Ensure that preparation, production and presentation of food are always of the highest quality
Check quality of ingredients, utensils and equipments used for cooking daily
Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage andsanitation
Oversee and inspect fresh produce , dairy and meat deliveries, adhering to food safety procedures
Complete awareness of all menu items, their recipe procedures and presentation standards
Label all ingredients as well as preps/ doughs for date of manufacture and best before
Monitor stock levels and maintain records of all ingredients used in the kitchen as well as preps required nextday for smooth operations
Personally responsible for hygiene, safety and correct use of equipment and utensils
Train and mentor all junior cooks for their required roles
Ensure all kitchen employees maintain required food handling and sanitation certifications and practices
Ensure proper grooming and hygiene standards for all commis and stewarding staff
Ensure that all kitchen equipment and tools are in good working order and maintained properly
Must possess a positive attitude and have the ability to work with a variety of people and in co-operation with co-workers efficiently and effectively
