A Commis 1 in a Chinese kitchen is responsible for assisting with the preparation and cooking of various Chinese dishes while supporting senior chefs. This role requires a solid understanding of Chinese culinary techniques, ingredients, and equipment.
Key Responsibilities of a Commis 1 in a Chinese Kitchen:
• Food Preparation :
• Preparing ingredients for Chinese dishes such as chopping vegetables, slicing meats, and prepping seafood.
• Assisting with marinating meats and preparing sauces, broths, and stocks essential for dishes like stir-fries, soups, and dim sum.
• Understanding and handling various Chinese ingredients (e.g., soy sauce, ginger, garlic, Sichuan peppercorns, sesame oil).
• Cooking Assistance :
• Assisting with the cooking of dishes under the guidance of senior chefs, such as stir-frying, steaming, boiling, and deep-frying.
• Handling specialized cooking techniques used in Chinese cuisine, such as wok cooking , steaming in bamboo steamers, and using the proper amount of heat and oil.
• Maintaining Hygiene and Cleanliness :
• Ensuring that the workstations, tools, and utensils are cleaned and sanitized after use.
• Following strict hygiene standards to maintain cleanliness in the kitchen.
• Assisting the Chef de Partie :
• Supporting the Chef de Partie and senior chefs by preparing ingredients and ensuring that the cooking process runs smoothly.
• Helping to ensure timely service by organizing prep work and cooking in accordance with the restaurant's pace.
• Use of Equipment :
