- Making recipes as per the instruction of the Chef.
- Ensure that the highest degree of hygiene and cleanliness of
all equipment and utensils are maintained in Kitchen.
- Continental food knowledge preferred.
- Accurately measuring meal ingredients for the Chef de Partie.
- Responsible for preparing and cooking all food items by the
recipe and to specification.
- Wash and peel fresh fruits, vegetables and also able to weigh,
measure and mix ingredients on correct proportions.
- Have general knowledge of cooking temperatures, making
soups & sauces.
- Check and ensure the correctness of the temperature of
appliances and food.
- Minimize waste and maintain controls to attain forecasted
food cost.
- Preparing basic sauces & curries as directed by the Chef de
Partie.
- Receiving deliveries and verifying that all ordered items have
been delivered and are of good quality.
- Taking inventory of kitchen supplies and notifying the
supervisor of low or depleted items.
- Discarding all expired and spoiled food items stored in the
stock rooms, refrigerators, and freezers.
- Performing basic cleaning duties and ensuring that
workstations are properly sanitized.
- Plating and presenting meal items as per the Chef de Parties'
instructions.
- Able to operate kitchen equipment like braising pan, baking
ovens, stoves, grills, microwaves and fryers.
- Assists in providing on the job training & development of new
cooks
