Job Title: CDP (Chinese Cuisine)
Job Summary:
The Chef de Partie (CDP) in the Chinese section is responsible for preparing, cooking, and presenting Chinese dishes to the highest standards. The CDP will oversee a specific area within the Chinese kitchen, ensure timely preparation, and maintain high levels of food quality, safety, and hygiene.
Key Responsibilities:
• Prepare, cook, and present Chinese cuisine, including traditional and contemporary dishes.
• Manage a specific section of the kitchen, such as wok, dim sum, or soup, ensuring the section is clean and organized.
• Work with the Sous Chef and kitchen team to develop new Chinese dishes and maintain consistency in preparation.
• Supervise and guide junior kitchen staff in the preparation, cooking, and presentation of dishes.
• Ensure all dishes are prepared to order and delivered on time, with attention to detail in taste, presentation, and portion size.
• Monitor food stock and ingredients for the Chinese section, ordering ingredients as needed and minimizing wastage.
• Maintain high standards of cleanliness, ensuring that the section adheres to health and safety regulations.
• Assist in menu planning, pricing, and costing of Chinese dishes.
• Maintain knowledge of industry trends and continuously introduce new techniques and ideas for Chinese cuisine.
• Work closely with other sections to ensure smooth kitchen operations during service.
• Adhere to all kitchen safety protocols and maintain proper storage of food and ingredients.
Skills & Qualifications:
• Proven experience as a Chef de Partie or in a similar role within a Chinese kitchen.
• In-depth knowledge of Chinese cooking techniques and regional Chinese cuisines (e.g., Cantonese, Sichuan, Hunan).
• Ability to work in a fast-paced kitchen environment and manage high-pressure situations.
• Strong leadership skills with the ability to train and mentor junior staff.
• Excellent time management and organizational skills.
• Keen attention to detail, ensuring consistency in presentation and taste.
• Knowledge of food hygiene and safety standards.
• Culinary certification or relevant experience in Chinese cuisine is preferred.
Work Conditions:
• Will work in a busy kitchen environment, involving exposure to heat, cooking odors, and noise.
• Flexibility to work evenings, weekends, and holidays as required.

Pay: ?30,000.00 - ?35,000.00 per month
