RESPONSIBILITIES/DUTIES FOOD SAFETY & HYGINE \xef\x82\xb7 CAYG - Ensure & be responsible that cleaning standards are maintained according to company standards & FSSAI guidelines \xef\x82\xb7 Food Safety & Sanitization Process \xe2\x80\x93 Ensure & Responsible for Food safety procedures to be followed in the Restaurant ; Sharing of food safety report \xef\x82\xb7 MRDs- Ensure & Be responsible that the correct expiry dates are mentioned on each product in the restaurant \xef\x82\xb7 Grooming Policy- Ensure Adherence to Grooming policy of the company \xef\x82\xb7 Safety & Security Standards- Ensure all the required Safety & Security standards are followed \xef\x82\xb7 Temperature of Products-Ensure all products are within use through dates & FIFO \xef\x82\xb7 PPE- Ensure & be responsible Responsible for maintaining stock of Disposable gloves, Caps and other PPE. \xef\x82\xb7 Cleaning Tasks- Ensure Proper functioning of Back Sink and related tasks \xef\x82\xb7 Hand wash Policy- Ensure all employees on shift are healthy and follow hand wash policy MAINTENANCE & CLEANLINESS \xef\x82\xb7 Cleaning of Stations/Equipment- Ensuring Cleaning standards are met at the Restaurant \xef\x82\xb7 FOH & BOH- Ensure maintenance targets are met \xef\x82\xb7 Cleaning Chemicals Stock-Ensure Adequate stocks \xef\x82\xb7 PM Tasks- Manage Maintenance costs as per budgets \xef\x82\xb7 Equipment Troubleshooting- Ensure minimum downtime of equipment\xe2\x80\x99s by following PM protocol INVENTORY MANAGEMENT \xef\x82\xb7 Product Storage- Ensure zero stock outs \xef\x82\xb7 Product Receiving- Ensure product receipts are done as per the required protocols \xef\x82\xb7 Wastage Tracking- Reduce Variance & wastage by formulating & Implementing appropriate action plans \xef\x82\xb7 FIFO- Ensure & be responsible for achievement of Variance/Wastage Targets SHIFT MANAGEMENT \xef\x82\xb7 PPE- Shift planning (PPE) \xef\x82\xb7 Roaster Planning- Weekly roster planning & monitoring \xef\x82\xb7 Sales Projection- Provide Weekly & Daily Sales projections & Ensure shift planning is done accordingly \xef\x82\xb7 Deployment Charts- Ensure teams are positioned as per the deployment chart \xef\x82\xb7 Observation Posts- Ensure effective & efficient use of observation post \xef\x82\xb7 Danger Zone- Ensure the team is aware of the appropriate remedial actions required in case of Danger Zone \xef\x82\xb7 Open/Close Checklist- Ensure & be responsible for timely completion of the required checklists \xef\x82\xb7 QSC Travel Path- Ensure that QSC standards are maintained in the Restaurant.
